Le Bilboquet Market to finally open its doors this month. 


This week, Altima was treated to a pre-opening, behind-the-scenes glimpse inside. The Market’s Palm Beach-inspired interior palette features marble, colorful Italian tiles and terrazzo floors. An oversized, Mario Lopez Torres rattan chandelier playfully hangs at the center. Among the many stand out delicacies being prepared that day: Italian sandwiches made to order, croque monsieurs, delectable desserts like Peruvian Avenue Cake (dome cake with chocolate mousse and hazelnut dacquoise) and flaky Napoleons.

Another star in the restaurant group’s vast portfolio, this elegant shop is the vision of the brand’s founder, Philippe Delgrange. “What we are creating is a true European gourmet market where one comes in for their morning espresso, caters lunch for the office, and — after a long day— picks up a dinner of our famed Cajun chicken, a baguette and daily sides.” 

Delgrange tapped his dear friend— acclaimed chef Francois Payard—for the role of Le Bilboquet Market’s Culinary Director. The gourmet shop will be open from 7 a.m. to 6 p.m., catering to all: year-round residents, families, corporate employees and local shopkeepers.

When it comes to this new market, Altima is decidedly bullish!
